Facilities at CMTES

Culinary Arts has created one of the finest facilities and Infrastructure for its students. The entire Infrastructure includes, A Training Restaurant, Training Kitchens (ATK - Advance Training kitchen) and (QTK - Quantity Training Kitchen), Bakery and Confectionary, Front Office, Housekeeping etc. and have been laid as per the International Standards for Training Hospitality Aspirants. The Audio Visual Classrooms, Library and the Computer Laboratories are well equipped and designed to cater to the modern student's requirements. The major training sections are as under:

Advanced Training Kitchen (ATK)

The Fresher are given an in-depth Theoretical and Practical Knowledge. In the ATK, the first year students learn the Basic Culinary Art Skills and gear up for further challenges, which they have to face in this field.The students practice Continental Cuisine and thus they get to learn International Cooking Traits and Arts. The ATK is where the Budding Professionals are fine polished to prove their mettle in the Industry. Here students are given training in Planning, Organizing and Preparation of Indian, Far Eastern, Oriental and Western Cuisines.

Front Office
The Front Office Manages, oversees the work of a Receptionist, Information Desk and Guest Relations. Front Office people are supposed to be very courteous to welcome and handle the guests.

House Keeping

House Keeping is the backbone of the Hotel. House Keeping personnel are responsible for Cleanliness, Maintenance and Aesthetic Appeal of the Hotel. House Keeping takes more manpower to accomplish countless functions that it does for the other departments in the Hotel Industry. The range of skills required for a Housekeeper is so extensive that it can be mastered only after continuous on-the job training. So, the students are subjected to practical training in the institute “Mock- up Room” (Model Guest Room).The students are taught the Cleaning, Bed Making and Maintenance of the Guest Room and Cleanliness of Public Areas. They also learn the Art of Flower Arranging and Interior Decoration, which plays an integral part in the Hotel Industry. It is a major Department, which accounts for the revenue of the Hotel. This Department makes the guest feel “ A Home away from Home”.

Computer Laboratory

A well equipped computer laboratory with the latest systems and Internet Connectivity is available at the Institute. Students can make use of this opportunity to update themselves with the current trend in the Industry. The students are divided in to batches and are allotted individual time to work on the Computers. An extra time, as required is also offered. Exhaustive collection of Books and Magazines on Computers are available to help the students to keep track of latest trends in the Information Technology.

Bakery And Confectionery

The Bakery and Confectionery Department trains the students in the Art of making various types of Breads, Confectioneries like Chocolate Confectionary Arts, Sugar Confectionary Arts, Cakes, Gateaux, Tortes, Different Icings and Bread Arts, to make them adepth in this field.

Training Restaurant & Mock Bar

Cooking with Wine, Food and Beverage Matching, Flambe with Brandy and Rum are no more and indecent but regular happening here. Getting ready for various Occasions from Presidential Gatherings to Marriages and Fast Food Service to Spirits, Champagne and Cocktails are part of the daily routine to make the students perfect and smoothen out the rough edge to make them perfect Professionals.

Library And Reading Room

A well-stocked Library and reading room where various Vernacular and Foreign Magazines, Periodicals and Journals are available. (The library is fully air-conditioned to provide maximum comfort for its users.).

Seminar Hall / Conference Room

Well-furnished progamme halls where Presentations, Demonstrations and Guest Lectures could be arranged at regular intervals.
